Ringana No Odo
Ingredients:
  • 500 gm Big Brinjal
  • 10 to 12 cloves of garlic paste (green garlic is very useful)
  • 3" ginger
  • 6 green chilly paste
  • 3 sp coriander powder
  • Salt to taste
  • ½ sp garam masala
  • ¼ sp aamchur powder(mango powder)
  • 6 tsp oil
  • ½ cup coriander (finely chopped)
  • 1 sp cumin seeds (jeera)
  • A pinch of asafetida
  • ¼ sp turmeric
  • 3 medium onions (shredded) or 1 spring onion (finely chopped)

Method:

  • Roast brinjal in oven at 200 deg for 15 min. You can also roast it on the gas.
  • Do it on the slow or fast gas for 10 min. (don't boil it in the cooker)
  • Allow it to cool and then cut with knife into pieces & smash it with the smasher.
  • Heat oil in a pan.
  • Add cumin seeds, asafetida and onions and cook it for 2 min.
  • Add all masala and coriander and mix it properly for 3 to 4 min.
  • If you want you can add curd with all masalas.
