Ingredients: |
- 500
gm Big Brinjal
- 10
to 12 cloves of garlic paste (green garlic is very useful)
- 3"
ginger
- 6 green
chilly paste
- 3
sp coriander powder
- Salt
to taste
- ½
sp garam masala
- ¼
sp aamchur powder(mango powder)
- 6
tsp oil
- ½
cup coriander (finely chopped)
- 1
sp cumin seeds (jeera)
- A
pinch of asafetida
- ¼
sp turmeric
- 3
medium onions (shredded) or 1 spring onion (finely chopped)

Method: - Roast
brinjal in oven at 200 deg for 15 min. You can also roast it on the gas.
- Do
it on the slow or fast gas for 10 min. (don't boil it in the cooker)
- Allow
it to cool and then cut with knife into pieces & smash it with the smasher.
- Heat
oil in a pan.

Add cumin seeds, asafetida and onions and cook it for 2 min.

Add all masala and coriander and mix it properly for 3 to 4 min.
- If
you want you can add curd with all masalas.
