Pulav with Pakodas
 Ingredients:

For Pulav:

  • 150 gm Basmati Rice.
  • 1 cup Chopped mix vegetables (peas, french
  • beans, carrot, cauliflower, potatoes)
  • 1/4th cup Onion (chopped in vertical slices)
  • 1 tsp Ginger (grated)
  • 1 tbsp Ghee or Oil.
  • ½ tsp Cumin seeds.
  • ½ tsp Red chili powder.
  • ½ tsp Cinnamon-Clove Powder.
  • 1Bay Leaf.
  • 1 Big Cardamom.
  • ½ tsp Turmeric.
  • Salt as per taste.

For Pakodas:

  • Oil as required.
  • ½ cup Gram flour (besan)
  • ½ tsp Ginger - garlic paste
  • 1 tsp Carom seeds (Ajwain)
  • ½ tsp Aniseeds (variyali/ snaff)
  • 1 Green chili (finely chopped)
  • ½ tsp red chili powder.
  • ½ tsp cinnamon-clove powder.
  • ½ tsp Turmeric.
  • Salt as per taste.

Method:

For Pakodas:
  • Heat oil & take it in a vessel.
  • Add gram flour to it.
  • Grind aniseeds & carom seeds & add it to gram flour.
  • Add ginger-garlic paste, green chilies, red chili powder, cinnamon-clove powder, turmeric & salt.
  • Mix all well.
  • Knead into a bit harder dough using warm water.
  • Make small oval balls & steam boil them.
  • When done, cut them into two.
For Pulav:
  • Wash rice thrice & soak them in water for about half an hour.
  • Heat oil or ghee in a large vessel & put cardamoms & bay leaf.
  • Then add sliced onions & sizzle them till golden brown.
  • Add all chopped vegetables & ginger & cook it on low heat for about 5-7 min.
  • Then add red chili powder, turmeric & cinnamon-clove powder.
  • Mix well.
  • Then add the soaked rice.
  • Then put salt & boiled pakodas.
  • Add water if needed.
  • Cover the pan with a lid & let it cook.
  • Serve hot with curd.
