Coconut Rice
Ingredients:
  • 5 tbsp (30gm)Maggi coconut Milk powder.
  • 1cup raw rice.
  • 3 tbsp (15gm) oil.
  • 1 tsp mustard seeds.
  • 1 tsp chana dal.
  • 1 tsp urad dal.
  • 4 red chillies broken.
  • 8-10 curry leaves.
  • 1 sliced onion.
  • Salt to taste.
Garnish
  • 1 tbsp coriander leaves.
Method:
  • Cook rice in double the quantity of water & keep aside.
  • Heat oil in a kadai.
  • Fry mustard seeds, chana dal & urad dal in hot oil for a minute.
  • Add red chilies & curry leaves.
  • Add the sliced onions & fry them till light brown.
  • Mix cooked rice & salt with rest of the ingredients in the kadai.
  • Put off the flame.
  • Sprinkle magi coconut milk powder on the rice & mix well.
  • Serve hot garnished with coriander leaves.
Tip
  • Rice can also be steamed to retain nutrients.
