Fruit & Vegetable Salad
  • 2 teacups orange segments.
  • 2 teacups apple slices.
  • 2 sliced bananas.
  • 2 teacups pineapple pieces.
  • 3 sweet limes (separated into segments)
  • 2 beetroots (chopped or sliced)
  • 1 medium head lettuce.
  • 50 grams powdered sugar.

For the topping:
  • 4 tablespoons pomegranate seeds.
  • 1 teacup chopped roasted peanuts.
To be mixed into a dressing (in a bottle)
  • 4 tablespoons salad oil.
  • 2 tablespoons white vinegar.
  • 2 tablespoons orange squash.
  • 2 teaspoons finely roasted and chopped peanuts or cashew nuts.
  • 1/2 teaspoon pepper powder.
  • 1/2 teaspoon salt.
  • Spread the lettuce leaves at the bottom of a large bowl.
  • Then arrange a layer of any fruit or vegetable and sprinkle a little sugar on top.
  • In this way, make layers of the orange and sweet lime segments, apple and banana slices, pineapple pieces and beetroot, each sprinkled with sugar (keeping aside some fruit and beetroot to make a colorful decoration).
  • Decorate the top layer in any attractive manner e.g. an outer layer of orange segments, an outer layer of beetroot with pineapple in the center.
  • Sprinkle pomegranate seeds and peanuts all over.
  • Just before serving, pour the dressing on top.
  • Serve cold.
